Does anyone know if you can use the Block or Deflect talent vs. a Critical Hit?

You can, it's just difficult do to the high attack result.

This is one of the reasons to spend a Force Point when you roll that natural 20. So those damnable Jedi / Sith won't make you miss anyway.

I think this happened to me and the DM ruled that a crit always hits so I couldn't block or deflect. I'm not sure if the rules specify.

I don't think that they do (specify, that is) either, and I've seen this go both ways.

In the games that I run, you can attempt to block/deflect a natural 20.

I decided to allow it. The wording in block/deflect is to 'negate' an attack, so I allowed it. Still haven't seen anything concrete on this rule though.

Rodney Thompson, the chief designer for the game from WotC, has already clarified this on the Order 66 Podcast over at d20radio.com. You can indeed block/deflect a crit. I suggest downloading the official FAQ at the WotC forums.
