5E is overbalanced towards martial characters and its getting old. Would you be happy being a martial character in a water adventure where missile weapons other than crossbows are useless and any non piercing melee weapon is heavily resisted or caused disadvantage on attack rolls? Should we have carried forward sneak attack immunities for broad ranges of monsters such as undead, golems and elementals? If you answers to these questions are a resounding yes than fine you can continue to argue with me that spell resistances and immunities should be in 5E. If not, then don't bother. Spells have been greatly nerfed in 5E in terms of both raw power and effect. They are not an old Basic or 1rst Edition feel by any stretch of the imagination.

I would announce to the PC upfront that it is waterworld and what special rules might apply.

And TBH resstances and immunities are rare and weak in 5E compared to other Editions.

Isn't that because your armor restricts your movement?

Not really. I have seen YouTube posts where people in plate armor do acrobatic jumps and other maneuvers in plate armor. I think the main reason you don't get dex modifiers is that the armor is too heavy and would quickly tire you out if you tried to nimbly dodge each blow. 5E tries to simulate that by stating that your dex modifier is of no help as you cannot effectively use it without tiring yourself out. I use the same line of reasoning with barbarian unarmored AC. The sword blow is not being deflected by the barbarian's boob because she has a high constitution score. She just dodges more effectively for a longer period of time than anyone else possibly could. Her endurance is superhuman and she more resembles an animal in combat. She has the ability to go all out for far longer than anyone else therefore her dodges are crisp and effective for the whole fight where a normal warrior would eventually tire out.
