For magic missile, yes it's just the first 'damage die rolled' so it'd be the first target you hit. However, for AoE spells you roll the damage and apply that to everyone. So if you'd have cast burning hands instead, you'd do 3d6 + Int mod to all targets. :)

These are great over all, and quite potent. I have player who loves playing wizards, he's going to squeal with delight when he see's the Level Up wizard + subclasses.
Except in O5E magic missile rolls one for and applies the same damage to each missile.

"If a spell or other effect deals damage to more than one target at the same time, roll the damage once for all of them."

Crawford confirms RAW that means a single die for all missiles:
(YMMV on Crawford rulings though.)

That would mean an additional +X to each missile.

Noticed a recurring typo: "1st-level" and such, with a hyphen, should only be used as an adjective. In expressions such as "a spell of 1st level or higher" there should be no hyphen.
In Level Up spell levels are always referred to using hyphens (it's a 1st-level spell or a spell of 1st-level or higher). Where the spell is described, when it's referred to in a feature or trait, etc. etc. if it's a spell, it's got a ##xx-level.
