D&D 5E why has none of the wisdom races caught on?

I see your point but why did no wisdom race ever catch on?
There are a lot of D&D races, and at least a few have Wisdom bonuses. My favorite would have been the thri-kreen, which had a Wisdom boost from 2e to 4e (I don't think this has ever come out in 5e). Thri-kreen have very strong flavor, but some people don't like that flavor, they're hard to roleplay, their abilities scare GMs, and they're generally restricted to the Dark Sun setting.

To answer questions about other Wisdom races, I would have to know their names! In some editions drow can choose to have a Wisdom bonus (since drow clerics are so obvious) but I don't know if drow clerics in particular are popular.

Yes, it was in the Planescape book that featured limbo. It was a pretty neat idea, but it was limited and unlikely for a player to gain a useful or cool level of proficiency. I retooled it for my purposes, and it was like a low-powered bender from Avatar: the Last Airbender.
Was that in the Planes of Chaos Box Set? I'm not sure where I should look. I read about the chaos-shaping proficiency (but either I read the wrong place or it's just not "organized" like other NWPs) and while I saw mention of the Anarch Guild I couldn't find any kit for it.

Still, it's cool... just very limited to one plane.

I read it but somehow I still do not see it, I got the Underdark evil dwarves are super different but not hill dwarves, what is the difference in your opinion?
They're not super different. But the differences are on page 71. It gives a perfectly cromulent reason for the difference in ASIs between hill and mountain dwarves.

they are just less terrible dwarves who live in a slightly different land, wood elves deserve to be a subrace (note I hate elves)more than them but that is neither here nor there in the end.

I don't think most campaigns would allow either Firbolg or Gith. They would be hard to fit into most campaign worlds. And players would ultimately be disappointed if they were, as they would lose most of their strengths (which, I admit, would be unbalancing).
Funnily, in the Icewind Dale game I'm in, I'm playing a firbolg (warlock) and another player is a githzerai (cleric). No disappointments here.
