I think for the most part you either have people who are willing to learn new systems or you don't. Those D&D-only people aren't going to be more likely to give Apocalypse World a shot because it's one of ten games available rather than ten thousand.I'm going to take a little other side of this.
When they actually involve different systems, you do have to find people who are willing to get up to speed on new systems. While I've done that a lot over the years, its not a given it'll be easy for you, and the more meaningful (which is to say ones actually likely to be used) options here out there, the more likely you are to get people who can't be bothered.
I mean, we already know there's a lot of people who don't want to learn anything but D&D (that's why the D20 craze happened and why there are a lot of 5e based games that look like they should really be something else); multiplying that issue out progressively larger seems unlikely to make less problems for a lot of people.
Of course there is. Unless they are solo games you have to convince a critical mass of people to come along with you to play them. RPGs are not board games or card games, they require a larger emotional and time investment. If you want support for your game - expansions, modules etc you need enough interest to pay the cost to that publishers costs + profit. How many games systems are launched and then sit dead in the water with no ongoing support.
Variety absolutely comes with cons.
