S1 is pretty much purely an episodic edgy demon-hunting show (not exactly an uncommon genre), but with hilarious early 2000s distortion FX, very heavy colour grading, constant jump-scares, and so on. It also took itself pretty seriously.
S2-4 it slooooowly transitioned from being this self-serious and edgy episodic show, into a show that was increasingly a slightly comedic/charming "buddy" show with a heavy supernatural theme, and that became much, much more character-driven, and much more into very lengthy arcs, increasingly abandoning episodic stuff.
Castiel (beginning of S4) arriving really starts changing a bit more rapidly.
(IIRC even by S2 they've abandoned the demented colour-grading and removed most of the jumpscares, moving away from it being horror-horror.)
I think most people felt that way, as it ran for 15 seasons! I suspect if they'd stuck to the pure original formula, including the colour-grading and jump-scares, 2-3 seasons would have been optimistic.
