Why is the go-to crunchy game Pathfinder? It really feels quite different from LU, especially PF 2e. That game really does not work for me.

More complex than 5e, less complex than PF2. Complexity is a Goldilocks thing. For some of us, Level Up is just right. ;)

Level Up is a crunchier version of 5e. It uses the same game mechanics as 5e does, but with some needed fixes.
