I'd keep it as a normal warhorse until Paladin level 8, then improve the warhorse as if it had advanced in the Dragon Disciple prestige class (in addition to the delayed normal mount abilities). That way the mount still improves, but not suddenly as if youh'd just applied the template directly.
Why? Archivists seem perfect for priests of Boccob, Vecna, or even Wee Jas. Is it because of the prayerbook aspect?

You could give them the special ability to use their Dexterity modifier instead of their Strength modifier for Climb and Jump checks (Same as cats in the MM) in addition to Nyeshet's Balance and Tumble racial bonus.
Leap of the Heavens would be a great racial bonus feat too, IMO.

I would like to go to the original GenCon one day though, if I ever holiday in the USA again. My money would go a lot further these days, thankfully. :)
Just what are you trying to prove here? There is a middle ground where characters are effective and useful, not just the categories "Optimised" and "Largely useless at their role"/
