I've DMed for younger players before, and the thing that keeps them interested is lots and lots of combat, and vivid descriptions of the characters doing awesome stunts, even if they only rolled a 16 to hit the goblin. Make it seem like they are doing good, and they'll love it.

I've done that before. It can work really well, and like Gizzard said, frees up your time. As long as you do get the 'guest player' to understand what you want out of the NPC, and who the NPC is, it can work beautifully.

Mongoose Publishing's The Quintessential Fighter has some rules on mass combat, but I've never done more than glance at them, so I don't know the quality.
