I think it would be the change from when a person's occupation defined them to when it became what the PERSON did for a living. In other words, when The Cop became Rory O'Donagh, he's a police officer.

Anyone feel like cooperatively converting some of the gear, vehicles, and starships from Star Wars to D20 Modern/Future? I'm going to give it a shot, myself, too... perhaps starting with a speederbike... gotta look over my notes. A lot of speeders would have very similar or even identical...

Or you could always go a completely different route... make a generic Jedi class, and do a number of Feat trees and Talent trees and let them choose their own fully customizable path...
