I guess it depends on the players. In my group, it's a non-issue. All of my players, including me and excluding one who doesn't drink, are simply unable to get drunk enough to affect the game, unless the whole thing was planned well in advance. Simply put, there isn't enough alcohol in the house...
I DM with a laptop and use a dice roller. Rolling doesn't really take time, the unpredictability is enjoyable, and it gives me room to fudge if needed.
