I think you hit the nail on the head here.
And I think players decide "how bad things could go" based on what they fear the most. And I think what they often fear the most is losing something they've gained or losing control of what they can do in that moment.

Tavern brawler has always been my favorite feat for Flavor, but it's requirement of hitting with unarmed strike or improvised weapon always seemed odd to me. Attacking with an unarmed strike or Improvised Weapon should be enough.
20 Strength is very doable by a Fighter at level 6. With the Unarmed Fighting Style and many bonus action options baked into the Rune Knight I don't think a single feat is needed for the concept.
I did think about it, but a 3 class multiclass comes online so late. And if I'm summoning my weapon regularly Berserker becomes less useful.
But a Ek/Paladin could throw with the style, and smite punch. Which is awesome.
I would consider Duergar as they have the racial Enlarge spell so they can get to huge all by themselves.
Although, You would lose out on Athletics expertise unless you dip Rogue, Bard, or now UA Ranger.
I think Unarmed strikes are absolutely Melee Attacks. You can tell this because they are not Ranged Attacks.
I think you might be confusing the fact that they are not Weapon Attacks (which is not surprising because the language is super confusing).

Mixing weapons and unarmed strikes is just as enabled by punchy style as purely focusing on unarmed strikes, and I agree...

Bringing it back to the thread, this is what makes Deft explorer so exciting to me.
Its features are ones that I think fit the core identity of the Ranger whether you like your Rangers with spells or no spells, beasts or no beasts, melee or range.
In either case their tracking ability defined them as Rangers far more than choice of weaponry.
