I have never played DCC. What are all of those wonky dice used for? And why is there no d18?

A purpose I could see it useful for would be a feature that lets you bump up weapon damage a die-grade or two. So for example a d12 weapon could be bumped up to a d14 or a d16 as an example. And, Spells or other effects could take advantage of these extra dice.

There was a d34? I have a few d30's... but I never knew of a d34. I mean, I guess it isn't impossible to make, but that was something in the game's rules? Crazy!

To clarify, if a Medium Creature has 2d8 Hit Points, would their level 1 be 2d8? Or would the Medium Creature's Hit-Die of 1d8 replace any starting Hit-Die/Dice?

That is my understanding of it, but it seems weird to me. A Halfling for example as a Warrior would have 6 HP at level 1, but also have 6 HP as an Expert, or a Spellcaster. While a Human Spellcaster would have 8 HP.

So, looking through Tasha's Guide there is a section for Sidekick Classes. However, in this section it does not tell us the Hit-Die each Sidekick Class has. The book states it will be listed on the Sidekick stat block, and looking at each Class I do not see any HIt-Die. Am I to assume that the...

I will say, at least each Spell comes with versatility. Some Spells have various variations depending on which Difficulty you want to try and cast it at, D1, D2, D3, etc.
