    You shouldn't aim for an unhitable AC. As Legildur said, Armor Class isn't meaningless at epic levels, far from it: if an enemy can always hit you, he will start to use fighting defensively, combat expertise, and power attack, in a measure depending on how low your AC is.

    Because using combat expertise and fighting defensively gives you a penalty to all attack rolls, and therefore makes you vulnerable to disarms, sunders, and (if you consider grapple checks to be an attack roll) grapples.

    I think it depends on the cosmology of the campaign: If you think each world has its own cosmology (IIRC this is the assumption in the Manual of the Planes), then the stats don't matter much since you can just say those are for an alternative cosmology.     IMHO, the only "problem" with Improved Combat Expertise is that it benefits those without manufactured weapons much more than it does those with them since the penalty to attack rolls applies to disarm checks. Monsters with ICE can be very dangerous.
