I suspect what you need is a Monk that follows the Way of Shadow. And a Cloak of the Bat. ;)

That is indeed an issue. Best I can think of is sharing protective spells with the mount. EDIT: Taking the Protection fighting style also helps (reaction to impose disadvantage on attack against creature within 5 feet of you; must wear shield), and Mounted Combat feat is a must for any paladin...

There is less need for something to level up with bounded accuracy. A paladin's mount can become hardier simply by investing gp into a set of barding, and their attacks will still hit most creatures (not as well as the paladin herself, mind you).
