Jumping
This ring continually allows the wearer to leap about as if a jump spell had been cast upon him, adding a +30 bonus to all his Jump checks and eliminating his usual maximum distances.
As the ring grants an unnamed bonus, it stacks with the boots.
Boots of Striding and Springing
The wearer of these boots moves at double her normal speed. In addition to this striding ability, these boots allow the wearer to make great leaps. She can jump with a +10 competence bonus to Jump checks, and the wearer’s jumping distance is not limited by her height.

The character's speed and maximum jumping distances both double. These benefits count as enhancement bonuses.
The boots grant an unnamed bonus to speed, the spell grants an enhancement bonus. They stack as well. Though as x3, not x2 then x2 again.
As clarified by the sage, animal affinity affects the base stat, it does not grant an enhancement bonus. So it does stack. Though you are right about the empowered bull's strength instead of belt. While he's at it, he can use an multiple overpowered/fortified animal affinity instead of just a normal one.
And the mental leap correction is also correct.
Mental Leap [Psionic]
Prerequisite: Str 13+, 6 ranks of the Jump skill, reserve power points 3+.
Benefit: You jump twice as far or as high as is indicated on your Jump check. Your maximum jump (a function of your height) is twice normal, and extra distance jumped (above and beyond the normal distance rolled) is not counted against your total allowed movement in the round.
Special: You can take this feat multiple times. Each time increases your jump multiple by one and increases your prerequisite of reserve power points by +8.
It specifically lists the effect of multiple mental leap feats.

While the general idea is very good, many of the bonuses listed don't stack. I don't have my books with me at the moment but what comes to mind is
A)the bonuses provided by Boots of S&S and a Ring of Jump are both competence bonuses, they don't stack.
B)Boots of S&S provide the same bonus as Expeditious Retreat, no stacking
C)Animal Affinity doesn't stack with Belt of Giants Strength, your better off going with a 4x Empowered Bull's Strength.
