Well, an untrained hireling costs 1 sp a day. A trained one (who might have ranks in listen and spot) costs 3. So, for less than 1 gold piece a week, you can get someone who should at least be able to scream when the ambushing orcs rip him open. For two gold pieces a week, you might even get a guy who could throw a rock and then go hide.
If you're morally flexible, you could always just rent a few kids from a farmer for a couple gold pieces (he doesn't have to feed them *and* he's getting paid? Score!), but that'd probably be an alignment violation for a paladin.
Both PCs should have excellent Charisma scores. You may eventually opt to each spend a feat on Leadership. With good charisma scores and a bit of time, you can build a small army of followers (not to mention some useful cohorts), which should take care of watches at night. It might cost you a feat each, but in gestalt, this can be solved by just taking a level of fighter at some point or another - even a sorcerer/warmage is going to have a few feats he wants from the Fighter list.
