Yeah, official setting gods would I think be the way to go.
There are so many official deities in all of the settings though that we might need to go setting by setting or something similar.

If you take the human deities from Greyhawk alone that have been published over the years there are something like 120 or 130 before you add the monster deities (Gruumsh, etc.) which add something like 50 or 60 more.

Cheers :)

I’d probably stick to just the big names, but setting by setting is also an option I suppose

I don't think you need all the demigod and hero deities. Except for Iuz. If you limit to the major core gods, Greyhawk isn't so bad. :)

Yeah. The Critical Role setting also uses the same deities, though they genericize the names In published books.
Though it's worth noting they also included one non-4e deity, Sarenrae, who comes from Pathfinder. (In-universe, this is even partially addressed: Sarenrae overlaps heavily with other deities, particularly Pelor, diminishing her influence, and then several losses of believers and territory weakened her church further until it was nearly forgotten, apparently.)

Notably, Sarenrae is sometimes instead referred to as "Raei," possibly to dodge licensing issues with Paizo.

Fortunately there aren’t a ton.
Yeah, even if you include all the evil gods, it's exactly 20 in the Dawn War pantheon. There were more, before the Dawn War, but a whole bunch of them died.
