They also make a point in telling you the attack bonus for the bite, but it's automatic damage when grappling due to the bite. That's why I asked :)

They tell you the attack bonus of the bite in the stat block.

They tell you the attack bonus of the rake in the sentence describing what happens during a hold.

A hellcat does not even get automatic bite damage. MM p. 9, under "Improved Grab": "If a creature does not constrict, each successful grapple check it makes during successive rounds automatically deals the damage listed for the attack that established the hold."

Some creatures in the MM had "Improved Grab" listings that implied automatic damage in following rounds (though, not the hellcat), but these were all removed in errata.
