A weird idea...would it work?

No, you would have to make exceptions. Playable humanoid races are in the SRD. Animals are in the SRD. A world whose ecosystem starts with carrion crawlers and ends with illithid with very little in between is going to be, frankly, dumb.

Animals I will grant you, but oddly Humans do not appear in the SRD although they are at least mentioned under the "humanoids" section in the MM, so I could sneak in one playable race (maybe more if I allow the XPH playable race Thri-Keen and the PHB race "human").

Maybe I would grant the exception that if the being exists on Earth circa 1000 A.D., then I would allow it. This lets out some of the modified "Dire" animals, but allows horses, dogs, cats, pigs, goats, wolves...and humans. Oh, and the "real" vermin, though not Colossal Spiders or the like.

Xvarts? I know they were updated in one of the Living Greyhawk pamphlets.

Interestingly, Xvarts were changed from Svarts for copyright reasons (Alan Garner's novels).
