My list of essential game systems would be:

D&D 3.5
d20 Modern
GURPS (presumably 4th when it comes out)
Feng Shui
Over the Edge (Atlas Games, elegance defined)
Call of Cthulu (non-d20)
Traveller (1st edition reprints)
The Fantasy Trip (way way out of print)
 

My recommendations:
Call of Cthulhu (BRP 6th edition just came out)
Delta Green (Modern Cthulhu)
Star Trek Player's Guide and Narrator's Guide (Decipher - CODA system)
Exalted
Orpheus (only 6 books for this series and that's it -- no more, but you can do just fine with the first book)
Mutants & Masterminds (don't know if you already have this, but it's worth it if you don't)
Kult: The Veil (if you really like horror)
 

If you're looking to get into the Unisystem and like generic books, I'd wait until Eden releases Beyond Human in a couple months.
 



Of course you need Talislanta then (www.talislanta.com there is also a teaser to download). Another great RPG with all you need in one (big blue) book.

Altho, it's the complete opposite to HERO, as the game system is extremely rules light and the campaign world is very much different to most fantasy settings (i.e. no elves, dwarves and such). Very colorful background, too.
