How could you resist the charme of a RPG where the GM is called "bartender", where you can learn skills like "look good at all times" or "swing nasty pointy thing with panache", and where you find weapon damage codes like "don't point this on my planet!". :p

I have to second (third? fourth?) reccomendations for Call of Chtulhu. Either the new 6th edition or the most excellent d20 version are excellent choices. This game meets both the "cool" and "essential" criteria. You also don't really need anything but the core book.

Under "cool" but not "essential" one-book games, I'd reccomend CORPS by BTRC. They seem to have forsaken it for their new one-book rpg, EABA, but it's nonetheless a nifty RPG. A complete generic RPG (though weighted heavily towards gritty modern-day settings) in a very slim, concisely-written volume.

Oh, and there's also FUDGE, which no gamer should be without.
