OK, so there was split opinion over whether lamia should even have its own Wikipedia article due to its mythological derivation; but now I'm asking whether anyone knows of any more sources for the Ankheg?

Actually I think they are more like grasshoppers. Their acid spit is similar to 'hopper "tobacco" (just ramped up to make it dangerous). And many hoppers do dig to bury their eggs.

But then, I still think thri-kreen are more grasshopper like (than mantises) after reading about them in the 1e MM II.
