Potentially, yes, but it would be up to your DM to allow creatures not specifically listed in the MM. Just make sure to determine all the stats of the forms you might take beforehand. The "familiarity" restriction is an easy way to handle this. Your character is not familiar with any forms you don't have statted up. The problem you will run into is a 7HD giant is going to have far less strenght, which is most of the point of being a giant in the first place.



As far as the original question goes, the key restriction you missed is the HD limit. You can never take the form of a standard Storm Giant with polymorph.

I fully understood the HD limit on the polymorph spell. I should have been a little more clear in the original statement. I assumed way too much. I will try to explain myself further. The Storm Giant listed in the Monster Manual v3.5 is a 19HD Huge creature. IS IT POSSIBLE for their to exist a Storm Giant that could be anything other than an adault? Of course it would have a significantly lower ability in every category But, the question stands, is it feasible?? It would ultimately be up to the DM to allow such variations into the campaign.

By the rules laid down in the collection of books that is WotC, the spell was executed poorly with respect to the manner in which it was used.
 

I should have been more clear as well. My second paragraph was addressed to the original poster.

I would imagine young Storm Giants have 7HD at some point in their development. What their stats would be at that point is a good question. As giants, I believe Storm Giants mature in the normal manner for mammals. Born helpless and mature over time to the capabilites of an adult(the version listed in the MM).
 

Polymorph turns you into an "average" individual of the species. Which is not to say average in a mathmatical sense. It means average as in those stats listed in the MM as the norm for the species. Are there any 7HD juneviles listed in the MM?
