Stupid question incoming; is this what real combat would look like? Are they holding back at all? It looks more like hack n slash with no stabby stabby.

This is awesome, but I wonder whether they could rule that digging the point of your sword into an armor gap would immediately end the fight in your favor, kind of like a submission win? The point would be blunted of course, and the soft armor underneath rated to withstand puncturing. I think that'd be relatively safe and lead to more realistic fighting in armor with swords.

Exactly, since that is what fighters would normally be trying to do (or drawing daggers to make it easier).

This basically makes it clear that smacking each other with swords while you’re both fully armoured is a complete waste of time (which is admittedly useful for popular culture, it’d be nice if we never saw someone stabbed right through the cuirass in GoT again) - rather more so than would be the case IRL. And if you’re not allowed to stab gaps then winning or losing is mostly about someone eventually getting a concussion or too tired to continue.

We are used to seeing Hollywood sword combat. Martial styles like this are closer to real combat, and ironically look "wrong" because they are not what we are used to seeing.

This is MMA (mixed martial arts), the intent isn't to replicate the actual medieval techniques. It's probably close in a lot of ways, as the combatants are actually fighting rather than putting on a performance.
