As a player, what monster/opponent is the most frustrating to fight?

Anything with a "Fear" effect, takes your low-will savers out of the battle.

Any undead, but I play rogues usually.

IN STAR WARS: Destroyer Droids are a beyotch to kill if you don't have a couple jedi on the party...

Digesters, no really ...

I mauled my party with a single Digester.
They were travelling by horse, when they were ambushed by one. It's first volley of acid killed every steed but the Paladin's Poke-mount, which of course sent them all tumbling to the ground.
those things are fast enough to avoid a party without mush ranged fighting capacity, and I find few parties are ready to handle that much acid damage.
I tend to think of these guys as CR 6 ground-based black dragons.
BTW - is it just me, or does that illustration in the MM remind anyone else of a flumph? Something about the face ...

I don't think I've ever been as frustrated with any monster as I was with the Steel Predators in Lord of the Iron Fortress.

Something like DR30, could grapple, trip, and SUNDER, and a DM who ruled that blindsight meant, "Can't be snuck up on even with a +30 Hide skill."

Oh, I hated those. "Here, it can see you all the way across the map because you're carrying magic items. So, abandon ye all hope of sneaking."

And one munched down on my +3 Anarchic Holy Greatsword. Granted, it was wood, but still...

I slaughtered players with this same creature, and yet the destrachan really sucked.

I don't see how an elemental can be boring. Bigger Earth Elementals have Awesome Blow, which is really fun to look at when the victim was riding a horse. Or a giant spider. Air elementals can pick you up with a whirlwind and drop you over something nasty :D

IMO the only problem with energy draining monsters (other than vampires, which are just stupid) is that energy drain lasts so long. The players get so discouraged that whoever has teleport immediately calls for retreat. Assuming he can cast it.

The most fustrating thing had to deal with is fighting a Shadow Dragon ( they learned the lesson of dismounting form the mounts ans spreading out!). Use force effects and ghoust touch weapoms against incorbreal creatures ( you have to also know that the extrodinary abbility Blindsight dosnt work against the creature! pg. 143 of Libris Mortis

As a DM and a player i find anything with an always on insta-kill ability (medusas gaze attacks, and the mindflayers ability are just two examples) there is nothing worse then geting ready for an encounter the having to sit it out because your character turned the wrong corner at the wrong time.

Bodaks.

Waaaay tougher than their CR would have you believe.

If you think having to make a "save or die" every round is tough, think about the poor guy it fixes it's gaze on...s/he has to save twice every round or die.

When these things show up, someone is toast.
