My question is simple: are such classes more fun when there are mechanical penalties for failing to live up to your ethos?
They can be, yeah.

The problem always comes from the fact that what my character's ethos is is really my bailiwick as the player of that character. Being told by the game, by some other player trying to interpret my character, or even the GM trying to interpret my character, is where it's not fun anymore.
