To answer the question about how to organize them, you basically just set up a thread here that will attract Austin gamers. One person should be in charge of keeping updates on who will run games, and who is going to play in those games. Posting 2 time slots is usually a good idea as well.

I would attend a game day in Austin, as long as I have no conflicts. And I can probably get another person from my gaming group to come as well.
If people are interested in playing one-offs of games they don't usually play, I might be persuaded to run a Traveller d20 demo, probably the same one I ran at the recent ENWorld game day in Arlington (I don't have time to make up another)

I am assuming you writer/publisher types bring a box of junk to sell or trade or whatever as well... That'd be cool. I might actually pick up a couple of things if certain people make it and I have some dough.

As far as running a game... Put me down for a "maybe." Every time I try to run a one-shot game, it ends up taking longer than I expected and turning into a two-parter--and as often as not, we never have the chance to finish. (Joe Carriker and Colin Suleiman will tell you that they're still hanging from GenCon.)
Let me give it some thought, see if I can come up with something that I feel I can actually have done in a reasonable amount of time.
Truth is, though, I also have to decide if I'm up to it. Honestly, the most appealing thing to me about a game-day is the chance to play, since I run most of the games for my own group. So I may just decide I want to be a good old-fashioned PC all day.
