Viking Arcanist Lore isn't something I've precisely read about much, my knowledge is broad and vague. Google is your friend if you want more in-depth stuff about Viking Magic. Searching I found these, can prove useful:

'bout berserkers: I'd add the ability to do ritual dancing and drinking of "stuff"
for an hour or so, which would increment their combat prowess for 1-2 hours... But this might be better modelled by an Incantation...
I actually liked what you did with them, but I have to insist in making them take hybrid form (not the lycanthrope's) but with the same modifiers you mentioned...
Which brings the next suggestion:
Animal Shape I: +2 Str
Animal Shape II: +4 Str, +2 Con
Animal Shape III: +6 Str, +4 Con
You know, incentives to continue in the class.
