Don't let 3.0/3.5 blah blah blah stop you from grabbing some great books. The ideas are excellent and you can convert the material to be anything that you need.

I think the problem for a retailer would be something more along the line of:
"I did stock up on all your proven sellers, they're still on my shelf, and now they won't sell because folks can get them from you for 5 bucks."

Prestige classes, especially the way that the provided a full organization for each, but didn't make it part of the class, so it was easy to use them seperately.
Legendary classes... not for the faint of heart. The ones in PoM come off a little weak to me, though.
Bard variants in PoM. Makes the bard more than just a spellsinger.
Terrain rules in path of the sword.
Small gods rules in PoF
What I didn't dig:
Variant classes. I hate core class bloat!
Schools. Trading XP for abilities. Problematic, especially under 3.5 XP rules.
Most of the variant rules in PoM
