Bipedal Gorgon Race

I'm looking to add a race of creatures that is like an evolved form of Gorgon to my campaign. I'm wondering if anyone has worked up stats for something like or similar to this. Before anyone suggests Encylclopedia Arcane for the Gorgotaur stats, let me just say I think that it is way too powerful for what I have in mind. Thanks!

What are the traits of this critter? High Natural Armor, moderate Int, and a Flesh-to-Stone breath weapon?

Would changing a Medusa to have a BW instead of a Gaze attack work?

I'm not exactly think about the high Gorgon from the Revised Scarred Lands Creature Collection. Remember the Yak-Men from Taladas? Use their body frame, give it the stone carapace of the gorgon, and give it the gorgon's breath weapon.

The Yakmen are in the 3.0E MM2. Another option would be jerry-rigging the model for anthropomorphic animals in Savage Species and tried applying it to the gorgon?
Alternatively, you could used beefed-up Minotaurs and give them a breath weapon and a better natural AC.
