My only suggestion, which was hinted at by others is to throw in an actual undead. Whatever is appropriate for the party level, which the dwarves haven't been able to deal with, maybe it's "crazy Uncle Elrock" or that is sneaky enough they haven't noticed when their own supplies get eaten up earlier than expected.
