Pretty cool, I will often do the same thing though not to the same degree. This is an enemy the PCs fought a while ago, I don't even bother with all of their spells, I just pick a few, typically one per spell level, and note them down.
He's a sorcerer, so I gave him some metamagic, in this case twinning his cantrips only and I didn't worry about tracking his sorcery points. Some nomenclature I didn't even bother with. No need to write out ranged spell attack since I already know they are spells, I also don't really need to know the range of the spells since in a melee, they're pretty much going to be in range anyway.
If this was an end boss, I might be more inclined to use a larger stat block like the upgraded Priest, something which has a lot of options to take on the players, but since this was someone who was going to die fairly quickly, I didn't feel the need for more.
