Science doesn't mesh nicely with fantasy here IMO
for exemple: in greek mythology the minotaur is the mix of a woman and a bull, but strangely enough, bull don't mix with horse, while centaur can mix with woman or horses, so logically we should be able to have horse-bull-centaur, it get silly too quickly to involve science here

A combination of the 2....for the ones that involve the core races (like 1/2 elf), I'd prefer an actual race. For the weird stuff, templates.

I did read the Asgard article. Some well thought out concepts, but I wasn't sure I liked it too much.
