Adding Domains
We use a similar house rule to what's being talked about. To keep it from being broken, we eliminated the post Level 1 domain ability. So it works as follows:
Level 1 cleric picks 2 domains, per standard rules.
Every 5th level thereafter, he receives an additional domain from which to cast his domain spells, but does not receive the domain ability.
The cleric can spend one of his feats to gain the domain ability of a domain from which he can already cast.

BTW - as a player I would love Clerics to be spontaneous spellcasters without limiting their selection or known spells. As a gamer, though, that is one of he most broken ideas I've heard yet on these boards. If you haven't noticed it (and many people haven't), 3.5PHB has rules for leaving spell slots open, which you can fill later in the day with the spell you need. This will give you the flxibility I think you're looking for in a cleric without completely breaking the balance on this class.
