I thought "American cheese" were definitionally processed American cheese - Wikipedia (although not always to the level of craft singles):

It looks like you may be right, which I didn’t realize. I guess I meant it isn’t all cheap and nast like Kraft, there are American cheese brands that taste good, have good texture, etc (and it melts well on beef).

Swiss, cheddar, provolone and blue cheese are common partners with beef, but American cheese is one of the classics, too- typically on cheeseburgers.

I think a good roast beef needs no cheese at all. I can understand swiss or provolone. Mayslacks here in NE has(d) amazing roast beef sandwhiches. Folks wanted cheese so they started adding an option with...cheezwhiz. Things started going down hill about that time.

Authentic north roast beef only has three options: mayo, cheese and sauce (plain is good too). People will put other things on but that is considered a little unusual
