Since it had rake, I gate it improved grab and pounce to go with it, like many other big cats. Should we reduce the base speed and drop sprint, since it was only said to resemble a cheetah, not necessarily possess its speed?

Since its "sphere is filled with jagged rocks and a pool of mud", perhaps a 20 ft. climb speed like a leopard? Maybe some Swim ranks like a tiger?

Our my little tentacle-pony still has a "Training an Arcadian Pony" line at the end of it. While I'd be OK leaving it out I wouldn't mind giving it one, maybe something like:

Training an Arcadian Pony
Although intelligent, an arcadian pony requires training before it will perform dangerous tasks on command. To be trained, an arcadian pony must have a friendly attitude toward the trainer (this can be achieved through a successful Diplomacy check). Training a friendly arcadian pony in fighting, guarding or hunting (see the Handle Animal skill for details) requires a DC 25 Handle Animal check, they can be trained in non-hazardous labour (such as fetching & carrying, drawing carts by themselves and carrying torches) with a DC 20 Handle Animal check, but can never be trained in combat riding or riding.

Arcadian pony colts are worth 1,000 gp each on the open market, while adults are worth 1,500 gp per head. Arcadian ponies mature at the same rate as horses. Professional trainers charge 1,000 gp to rear or train an arcadian pony, which serves a good or neutral master with absolute faithfulness for life.

I'd drop the Trip SA if you're giving it pounce-and-rake.

Giving it swim ranks (or maybe a swim speed or racial bonus?) is a good idea.

The "jagged rocks" makes me wonder about giving it the ability to camouflage itself as a chunk of black granite while waiting for its prey to get close. We can do that as a SQ but it could easily just be a racial bonus to Hide checks in rocky terrain.

Ah, well then the eyewing can probably wait a bit.

Cheetah is Str 16, Dex 19, Con 15, Int 2, Wis 12, Cha 6. Fiendish does nothing much to abilities, while half-fiend does Str +4, Dex +4, Con +2, Int +4, Cha +2. How about Str 20, Dex 21, Con 17, Int 2, Wis 12, Cha 8?

If we're making it "stony" perhaps we should swap the Dex and Con and give it more NA? Something like:

Str 20, Dex 17, Con 21, Int 2, Wis 12, Cha 8, +5 NA

Doh! Good catch on the training for the pony.

Yes, dropping trip is good. I'd go with a climb speed and Swim ranks/bonus (but probably not swim speed). As for the Dex-Con swap, that's fine, too. Definitely pleny of natural armor.

I had intended to simply drop the pony's training section, but since you went to all that trouble...Updated. :)

Back to the Maladomini tiger, are we dropping sprint as well as trip? Reduce land speed to 40 ft. (like a leopard)?

For the skills, how about borrowing a few of the leopard's skill bonuses as well. Something like...

Skills: Maladomini tigers have a +4 racial bonus on Hide and Move Silently checks and a +8 racial bonus on Balance, Climb, Jump, and Swim checks. A Maladomini tigers can always choose to take 10 on a Climb check, even if rushed or threatened.

*Maladomini tigers have an increased +4 racial bonus on Hide checks when in rocky terrain. This bonus on Hide checks increases to +8 when the Maladomini tiger is immobile.

Updated.

Any other special abilities? I could see borrowing resistance to cold and fire from the fiendish template, but probably not DR or SR.

Immunity to poison is common among devils and hellish petitioners, so I'm all for adding that.

What about adding a disease to their attacks?

Let's add immunity to poison and the resistances, sure. I don't really get a disease feel from these, but I could see a cursed wound, maybe.
