I think it's just the fact that the options are available and nicely detailed. That makes them intrigueing for play. Me, I don't need more than the core races/classes -- I don't even need all of those, but the fact that I've read Races of Faerun, or Savage Species, or what have you gives me a hankering to try out some of those options. At least every once in a while.
