CoS Castle Ravenloft for 12th level PCs

My group will be finishing up PotA next session. We are shifting away from long APs and to a more episodic campaign style now. I gave them options and they chose Castle Ravenloft...as in just chapter 4 of CoS.

We have a Paladin, Shadow Monk, Tomelock and Evoker. The casters tend to like the high damage flashy spells and not the utility campaign altering spells...so I have that going for me.

Any suggestions on modifications or should I just focus on running Strahd as optimally as possible? I do plan on boosting most encounters difficulty by about 50%. That should help.

I was thinking of not including the Sunblade and the holy symbol but that seems to take away a lot of the fun of the adventure. Maybe instead of randomly placing them place them both as far from each other as possible? (Sunblade in Sergei's tomb and holy symbol in the highest tower?) And then Strahd somewhere in the middle to harass the PCs and try to murder them one by one...

Ideas?
