Critical Smite?

If a paladin is making a smite attack, and it is a critical hit, is the smite damaged doubled? The PHB mentions that extra "dice" of damage (sneak attack, etc.) are not doubled, but normal and bonus damage is. What about Power Attack, strength bonuses, etc. Is there a chart somewhere that outlines critical hits more thoroughly?

Yes, the smite damage is doubled (or tripled, or quadrupled, as is appropriate for the weapon).

Extra damage that is measured in dice are not, but extra damage that is in discrete numbers (Power Attack, Str bonuses, ranger favored enemy bonuses, weapon enhancement bonuses to damage, etc.) are.
