Nope, my family is from the Northeast and that is the way I was taught as well. I always thought it was kind of dumb, but I do it that way most of the time.

That said, I'm just a pig. Fork in right hand, knife in left, shove it in my mouth as soon as it is cut. Except when dining with Dextra's family...

as far as the 1-2 bite thing I do it because it keeps the meat from loosing all it juices to the plate and drying out .

These things are usually class- not region-based.

Frankly, the whole switching hands baffles me a bit. It just seems like an exceedingly complicated and time consuming way to eat.
Also, apart from cutting steak (or any other kind of meat), what about the rest of the food on the plate? I also use the knife to help gather the potatoes, vegetables, rice etc. onto the fork.
I would also think that if you had any kind of sauce/gravy with your meal that it would leave a stain on the table, if you just put the knife down by the side of the plate, or run down the length of the knife, if you put it on the side of the plate (handle leaning on the table).
I also use just a fork from time to time, but it's generally only in very informal settings (when I'm by myself or with my parents).

Oh, and Hypersmurf, you forgot a question:
7) How do you eat spaghetti?

Amazing, I'm not the only one who is right handed and keeps the fork in my right hand...go Hellhound!! :D
