One handed two-weapon fighting doesn't work. Two-weapon fighting states "When you make an extra attack as a result of using a weapon that has the Light property", The light property states "That extra attack must be made with a different Light weapon". Dual wielder plainly states. "you can make one extra attack as a Bonus Action later on the same turn with a different weapon"
What you’re missing with this exploit is that you can make an attack, drop the weapon, then draw a different Light weapon as part of your second attack. That’s how one-handed dual wielding works.

It says it must be made with a different light weapon, not with a light weapon in the other hand and not with one that is being held at the same time.

If you are holding a Shield for example in one hand and a short sword in the other, you attack with the short sword and then sheath it, then you draw and attack with a Scimitar using the nick property.

I'm not sure I'd be able to stop slapping a player who tried that in front of me...
 


I think that’s how most of these rules exploits worth. Technically possible but would require some brass balls to square up to explain you are doing them. Even then probably overruled by social contract or rule zero.
