When the PC's are in an environment where item components are freely available then I totally handwave the issue and we convert the cash to items as the rules suggest. And at high levels it won't be an issue either since if the Wizard runs low on scroll ink he'll just say, "Gotta Teleport back to the city. Be back in half an hour."
It is only when they are travelling to areas where these components are unavailable that I make sure they track the components separately. As I said, in my current Sharn campaign it isn't an issue at all since you can't swing a dead Spiretop Dragon without hitting two Wizards and an Artificer.
