Fields Of Blood does have rules for some of this stuff, but they're tied to the book's unit-scale system so you would need to do a bit of conversion if not using the system.
It has a little bit on tunnelling under enemy fortifications. You make a roll once per week and it's a very dangerous line of work, which gave me kind of an image of unlucky kobolds being prodded into the tunnels with pointy sticks...
