no...a door made of treant wood is a manufactured object that just happens to be made from a creature, just like leather armor or a hair wreath.

There is a concept you are not seeming to get: Effective scores.
A creature can have a dexterity of 36 and then get paralyzed and have an effective dexterity of 0. The creature's dexterity is still 36 but they cannot use it.
A dead creature could have normal scores and have have 0 effective ratings for all of them: the ability scores still exist, they simply cannot make use of them.
No, a dead creature becomes an object, so that spells that target creatures (such as sleep) aren't wasted by hitting dead things.
Of course, they aren't wasted by hitting vermin either. My description of the dead condition lists them as mindless and thus not valid targets for the sleep spell.
