D&D 5E deadliness and the Tomb of Annihilation

Then make that an exception and/or lighten the rules on spell prep.

Rather that, than throwing out the baby with the bathwater by backtracking on the hard encounter controls, I mean.

That's fine, but you'll want to be aware of all the exceptions you'll need to make...

Spell preparation, disease recovery, magic item attunement.

Those come to my mind, but I'm 100% sure there are others. I'd encourage you to call those exceptions out as thoroughly as you can.

Nah. It was you who complicated things, so that's on you.

Me, I'm perfectly happy making small compromises to keep the big prize. You can always use the "light activity gains you an encounter point" rule to eventually gain a long rest even with no adventuring. And otherwise accept you won't be changing your spell list until your adventures tell you you need to make a change...

It doesn't have to be complicated unless you make it complicated 😊

Haha, well, when it comes to playing fast and loose, the DM is always right ;) Was just trying to provide helpful critique. YMMV.
