Giant City Defenses
In my CS, I've got a couple giant civilizations. In addition to some of the ideas here, the giants also use huge trained beasts as guard animals. They often use a type of dinosaur or dire animal with a good scent ability to root out pests (ie humanoids).
I also equip them with large siege-like weapons, but ones that are designed to hit a large area. The most common enemie would often be smaller than the giants, so they will have catapults or such that hurl a spray of rocks rather than one large one.
As for resources, they often cultivate herds of large to gigantic animals, (mammoth or dinosaur herds) and that depends on the region. They are very protective of these food resources, and do not take kindly to a humanoid tribe moving near them.
In fact, IMC one of the main reasons giants have not taken over much of the world is because of the strain it puts on resources when they have attempted such campaigns.
