I did some back-of-the-envelope math based on the DMG guidelines.
Start with the elemental stats listed in the MM and modify them thusly:
Medium elemental: CR 2, half hit points, reduce damage dice by one (so a 2d8+5 attack becomes 1d8+5; the air elemental's 3d8 whirlwind deals 2d8+2)
Large Elemental: CR 5, normal hit points, normal damage dice
Huge Elemental: CR 8, double hit points, increase damage dice by one (2d8 -> 3d8 and 3d8 -> 4d8)
Gargantuan Elemental: CR 12, triple hit points, double damage dice (2d8 -> 4d8 and 3d8 -> 6d8)
I love that bounded accuracy means you don't need to adjust the creature's attacks, AC, or save DC. Some people may wish to do so to reflect changes to Proficiency modifier at different CRs, but you don't need to for the creature to work perfectly well in an encounter.
