I try to create a diversity in my orcs. Lowland orcs barely have a nose, and are either gray-, yellow-, or green-skinned. I tend to describe mountain orcs as having pigish snouts and a larger build, with gray or brown skin. Not that I give the PCs some kind of sociological breakdown of the orc diversity in the region. I just like having a mix at times (like when I ran Sons of Gruumsh).
I would never use Shrek in reference to my ogres. His build, those Snork ears of his... It would cause my entire campaign to implode. Unless it's a gang of them, I tend to describe every orge a little differently. Whether it's dress or body shape, my ogres vary, but never in the direction of Shrek. Definitely closer to the LotR trolls.
