Just so I'm clear (cause this is only my 2nd time pledging on Kickstarter), if I pledge X amount of dollars and the KS project ends without reaching all of the goals I hoped to achieve, I can get a refund on the amount I "over pledged" and just pay for the goals that were unlocked?

No. You can only change your pledge before the KS ends.

I've backed this to get the Perytons - as long as it passes $25K I'm happy - hoping I wont have to cancel at the last minute if the Peryton sculpt isn't released.
